Gluten Free/Wheat Free...What can I eat???

No, I'm not gluten intolerant, I'm allergic to wheat.  But not just a little allergic, like off the charts allergic. It doesn't show up immediately, it creeps in and wreaks havoc on my body.  It's easy to "cheat" and just eat something because I'm hungry or I know it tastes good and I want it (I know, self control).

If you have an Aldi near you, they have some really great Gluten free products called G-free. Some of it I can't eat due to other food allergies, but for the most part I can.  Their pasta is brown rice pasta, instead of the hard to digest corn pasta that many other stores carry.

G-Free chia banana Brownies
I made an A-MAZING brownie mix.  I had no eggs so I substituted Chia eggs (1 tsp chia seeds, 2 tsp water makes equivalent of 1 egg, just let it sit a few minutes and keep stirring)  And I didn't want to use butter, so to save on the calories I used 2 bananas.  I mixed the chia and bananas together first then added to the brownie mix.  I needed a little extra water as I started mixing (don't ask how much, I make stuff up and hope for the best).  I put it in a greased pan and cooked for 35 min (it needs a bit extra due to substituted ingredients).  Yummy!!!!!!!!!!!!!!!!!!!!! and for the most part HEALTHY-ish. lol
